Frank Burns’ Input
Frank and I had such a great discussion - key points (re the cookbook) include:
The question is, “What do we know?” Not theory, what we should do, but the basic things we know that work. I'll look at the cookbook with that in mind, so that it's comprehensive and not overly full.
Also: the notion of nested boxes - boxes inside of boxes, anchored at the lower left corner... the thinking process of doing beef stew/soup, for example. The core box is beef and onions - the essence of the stew. Then next box has decisions that augment the core - which vegetables, starches to use. And the next box has to do with subtlety of herbs/spices. That's all there is to beef stew, and so if I include a chart that identifies the role that vegetables can have in a stew (add flavor, soak up flavor, or provide bulk), then people can make their choices.
What's exciting to me is that it provides a roadmap for creativity. And, also, I'll describe consequences to certain decisions. Seems to me that the reasons many people aren't creative in cooking is that they don't have knowledge of what the consequences are when they make decisions. So if I can provide some of that in this cookbook, then it gives them a leg up.
